Ingredients:
  • 1 1/2 tsp curry paste, Thai green
  • 2 1/2 cups coconut milk
  • 1/2 onion, yellow, sliced thin (~1/3 cup)
  • 2 cups mushroom, button or common white, quartered
  • 10 piece kaffir lime leaves, frozen1
  • 1/2 pepper, red, cut into 1/4" strips
  • 1/2 pepper, yellow, cut into 1/4" strips
  • 8 oz turkey, breast roasted, shredded
  • 4 leaves basil, fresh, sliced thin
  • 1 tsp lime juice
  • 2 tsp fish sauce
  • 2 onion, green / scallion, sliced diagonally (~1/3 cup)
  1. Alternatives would be: lime zest
Instructions:
  1. Cooking
    1. In a pot over medium heat, add the green curry paste to 1/2 cup coconut milk.
    2. Simmer until reduced by half.
    3. Now add sliced onions and button mushrooms, simmer for 2 minutes.
    4. Add the remaining coconut milk and the lime leaves and simmer for 20 minutes.
    5. Add the red and yellow pepper strips, the cooked, shredded turkey meat along with half the chopped basil.
    6. Simmer for 3 minutes.
    7. Season with lime juice and fish sauce.
    8. Serve topped with remaining basil and green onions.
