Ingredients:
3/4 cup rice, brown parboiled
2 1/2 cups water
2 orange
1/4 cup apricots, dried, chopped
1 tbsp walnuts, toasted, chopped
8 oz turkey, breast, cooked, white meat, shredded
2 tbsp mint, fresh, chopped
2 tbsp basil, fresh, chopped
2 tbsp raisins, golden
1 tsp sesame oil
1 tbsp canola oil
1/4 tsp salt, sea
1/4 tsp pepper, black freshly ground
Instructions:
Cooking
Prepare the brown rice as per instructions on the packaging.
As the rice cooks, peel and section the oranges, reserving any juices that are emitted.
Once the rice is cooked and cools slightly, mix together with the orange segments, apricots, walnuts, turkey, mint, basil and raisins in a bowl.
Pour the reserved orange juice into a bowl and combine with the sesame oil, canola oil salt and pepper.
Mix into the rice salad.
