Ingredients:
  • 12 slice bread, multi-grain
  • 1/4 cup mayonnaise, reduced-calorie, cholesterol-free
  • 1/3 cup shredded lettuce, iceberg
  • 2 1/2 oz turkey, breast roasted, sliced
  • 3 slice prosciutto, cut in half (~1 oz)
  • 1/4 tsp pepper, black freshly ground
  • 1 avocado, pitted, peeled
  • 1 tbsp lime juice
  • 1 orange, peeled, chopped (~3/4 cup)
  • 2 cups arugula, baby
  • 2 tsp pumpkin seeds, toasted
Instructions:
  1. Prep
    1. Spread half of the mayonnaise onto 4 of the bread slices.
    2. Top with the lettuce and the sliced cooked turkey breast.
  2. Cooking
    1. In a non stick pan over medium heat, cook the prosciutto until crispy, about 2 minutes.
    2. Distribute the crispy prosciutto equally over top of the turkey.
    3. Spread the remaining mayonnaise onto 4 slices of bread and cover the prosciutto, mayo side down.
    4. Mash the avocado with the lime juice and spread it onto the 4 slices of bread that were placed over the prosciutto.
    5. Top these slices with the orange, arugula and pumpkin seeds.
    6. Place the last 4 slices of bread atop the sandwich, pressing down lightly to adhere, then slice and serve.
