Ingredients:
12 slice bread, multi-grain
1/4 cup mayonnaise, reduced-calorie, cholesterol-free
1/3 cup shredded lettuce, iceberg
2 1/2 oz turkey, breast roasted, sliced
3 slice prosciutto, cut in half (~1 oz)
1/4 tsp pepper, black freshly ground
1 avocado, pitted, peeled
1 tbsp lime juice
1 orange, peeled, chopped (~3/4 cup)
2 cups arugula, baby
2 tsp pumpkin seeds, toasted
Instructions:
Prep
Spread half of the mayonnaise onto 4 of the bread slices.
Top with the lettuce and the sliced cooked turkey breast.
Cooking
In a non stick pan over medium heat, cook the prosciutto until crispy, about 2 minutes.
Distribute the crispy prosciutto equally over top of the turkey.
Spread the remaining mayonnaise onto 4 slices of bread and cover the prosciutto, mayo side down.
Mash the avocado with the lime juice and spread it onto the 4 slices of bread that were placed over the prosciutto.
Top these slices with the orange, arugula and pumpkin seeds.
Place the last 4 slices of bread atop the sandwich, pressing down lightly to adhere, then slice and serve.
