Ingredients:
2 tbsp olive oil
2 tbsp water
1 tbsp honey
1 tbsp vinegar, tarragon
1
1 tbsp lime zest
1 tbsp lime juice
1 tbsp mint, fresh, chopped
1/2 tsp red pepper flakes
1/4 tsp salt, sea
5 cups mango, pitted, cubed
1 cup pineapple, fresh, cubed
1/2 cucumber, english, halved, sliced (~1 1/2 cups)
1/4 cup pepper, red, diced
4 onion, green / scallion, sliced (~2/3 cup)
2 1/2 cups beans, black canned, without salt, drained, rinsed
Alternatives would be:
vinegar, white wine
Instructions:
Prep
Place the olive oil, water, honey, tarragon vinegar, lime zest, lime juice, mint, red pepper flakes and salt in a food processor and pulse to combine.
Set aside.
Toss together the mango, pineapple, cucumber, red pepper, green onion and black beans.
Add the dressing and toss to coat.
