Ingredients:
2 oz mushroom, wild dried mix (~2 1/3 cups)
4 cups water, boiling
2 tsp olive oil
2 cups onion, yellow, finely chopped (~3)
1 tbsp thyme, fresh, chopped
2 tbsp brandy
2 tbsp flour, all purpose
2 cups beef broth, canned low sodium
1/4 tsp salt, kosher
1/2 tsp pepper, black freshly ground
2 tbsp sour cream, fat free
1 tsp chopped chives, fresh
Instructions:
Prep
Soak the dried mushrooms in the boiling water.
Cooking
Heat the oil in large pot over medium high heat.
Add onions; sauté until golden, about 5 minutes.
Strain off mushrooms and reserve liquid.
Add all mushrooms and thyme; saute 3 minutes.
Add brandy; stir 30 seconds, then mix in flour.
Slowly stir in broth and mushroom liquid; bring soup to boil.
Reduce heat; simmer uncovered 10 minutes.
Season with salt and pepper.
Ladle into bowls.
Garnish with sour cream and chopped chives.
