Ingredients:
  • 2 oz mushroom, wild dried mix (~2 1/3 cups)
  • 4 cups water, boiling
  • 2 tsp olive oil
  • 2 cups onion, yellow, finely chopped (~3)
  • 1 tbsp thyme, fresh, chopped
  • 2 tbsp brandy
  • 2 tbsp flour, all purpose
  • 2 cups beef broth, canned low sodium
  • 1/4 tsp salt, kosher
  • 1/2 tsp pepper, black freshly ground
  • 2 tbsp sour cream, fat free
  • 1 tsp chopped chives, fresh
Instructions:
  1. Prep
    1. Soak the dried mushrooms in the boiling water.
  2. Cooking
    1. Heat the oil in large pot over medium high heat.
    2. Add onions; sauté until golden, about 5 minutes.
    3. Strain off mushrooms and reserve liquid.
    4. Add all mushrooms and thyme; saute 3 minutes.
    5. Add brandy; stir 30 seconds, then mix in flour.
    6. Slowly stir in broth and mushroom liquid; bring soup to boil.
    7. Reduce heat; simmer uncovered 10 minutes.
    8. Season with salt and pepper.
    9. Ladle into bowls.
    10. Garnish with sour cream and chopped chives.
