Ingredients:
1/2 bread, french baguette, whole wheat
1 tbsp olive oil
2 tbsp chopped shallots
2 oz mushroom, shiitake, chopped, stemmed (~3 1/4)
2 oz mushroom, oyster, chopped (~1/3 large)
1 oz mushroom, crimini, chopped (~2)
1 clove garlic, minced (~1 tsp)
2 tbsp cream, heavy (35%)
2 tsp thyme, fresh, chopped
1/4 tsp lemon zest
2/3 cup cheese, gruyere, grated
1/4 cup cheese, Parmesan, low sodium, grated
Instructions:
Prep
Preheat oven to 375F.
Slice the baguette half in half lengthwise and then into four 6" long portions.
Cooking
Place on a baking sheet and toast in oven until golden, about 9 minutes. Cool.
Preheat broiler.
Heat oil in large pan over medium high heat.
Add shallots; saute 1 minute.
Add all mushrooms; saute until beginning to brown, about 6 minutes.
Stir in garlic; saute 1 minute.
Remove from heat. Stir in cream, thyme, and lemon zest.
Allow to cool. Mix in both cheeses.
Top each toast with about 1/4 of the mushroom topping.
Place on a rimmed baking sheets.
Broil until cheese is melted and begins to brown, watching closely to prevent burning, about 3 minutes.
Transfer to serving platter. Serve warm.
