Ingredients:
  • 1/2 bread, french baguette, whole wheat
  • 1 tbsp olive oil
  • 2 tbsp chopped shallots
  • 2 oz mushroom, shiitake, chopped, stemmed (~3 1/4)
  • 2 oz mushroom, oyster, chopped (~1/3 large)
  • 1 oz mushroom, crimini, chopped (~2)
  • 1 clove garlic, minced (~1 tsp)
  • 2 tbsp cream, heavy (35%)
  • 2 tsp thyme, fresh, chopped
  • 1/4 tsp lemon zest
  • 2/3 cup cheese, gruyere, grated
  • 1/4 cup cheese, Parmesan, low sodium, grated
Instructions:
  1. Prep
    1. Preheat oven to 375F.
    2. Slice the baguette half in half lengthwise and then into four 6" long portions.
  2. Cooking
    1. Place on a baking sheet and toast in oven until golden, about 9 minutes. Cool.
    2. Preheat broiler.
    3. Heat oil in large pan over medium high heat.
    4. Add shallots; saute 1 minute.
    5. Add all mushrooms; saute until beginning to brown, about 6 minutes.
    6. Stir in garlic; saute 1 minute.
    7. Remove from heat. Stir in cream, thyme, and lemon zest.
    8. Allow to cool. Mix in both cheeses.
    9. Top each toast with about 1/4 of the mushroom topping.
    10. Place on a rimmed baking sheets.
    11. Broil until cheese is melted and begins to brown, watching closely to prevent burning, about 3 minutes.
    12. Transfer to serving platter. Serve warm.
