Ingredients:
1 tsp olive oil
1 onion, yellow, diced (~2/3 cup)
2 celery stalk, diced (~2/3 cup)
2 carrot, peeled, diced (~1 cup)
2 tsp garlic, minced
5 cups vegetable broth, canned low sodium
1 1/2 cups tomatoes, canned diced, no salt added
2 cups beans, mixed, canned, no salt added
2 tbsp tomato paste, without salt added
1 oz pasta, macaroni, whole wheat (~1/4 cup)
2 tsp italian seasoning mix
1/4 tsp pepper, black freshly ground
1/4 cup pesto sauce, basil
1/4 cup cheese, Parmesan, low sodium, grated
Instructions:
Cooking
Heat the oil in a large pot over medium heat.
Add the onions, celery, carrot and garlic and saute for 3 minutes.
Add the broth, diced tomatoes, beans, tomato paste, macaroni, Italian seasoning mix, pepper and pesto.
Bring to a boil.
Reduce the heat, cover and simmer for 25 minutes, stirring occasionally.
Ladle into bowls and serve with Parmesan sprinkled on top.
