Ingredients:
  • 1 tsp olive oil
  • 1 onion, yellow, diced (~2/3 cup)
  • 2 celery stalk, diced (~2/3 cup)
  • 2 carrot, peeled, diced (~1 cup)
  • 2 tsp garlic, minced
  • 5 cups vegetable broth, canned low sodium
  • 1 1/2 cups tomatoes, canned diced, no salt added
  • 2 cups beans, mixed, canned, no salt added
  • 2 tbsp tomato paste, without salt added
  • 1 oz pasta, macaroni, whole wheat (~1/4 cup)
  • 2 tsp italian seasoning mix
  • 1/4 tsp pepper, black freshly ground
  • 1/4 cup pesto sauce, basil
  • 1/4 cup cheese, Parmesan, low sodium, grated
Instructions:
  1. Cooking
    1. Heat the oil in a large pot over medium heat.
    2. Add the onions, celery, carrot and garlic and saute for 3 minutes.
    3. Add the broth, diced tomatoes, beans, tomato paste, macaroni, Italian seasoning mix, pepper and pesto.
    4. Bring to a boil.
    5. Reduce the heat, cover and simmer for 25 minutes, stirring occasionally.
    6. Ladle into bowls and serve with Parmesan sprinkled on top.
