Ingredients:
4 oz pasta, lasagna, whole wheat
2 tsp canola oil
1 tsp cooking oil spray
1 onion, yellow, chopped (~11 tbsp)
8 oz turkey, ground lean

1 1/2 cups tomato sauce, no salt added
2 1/4 tsp italian seasoning mix
1/2 tsp pepper, black freshly ground
1/2 tsp garlic powder
6 mushroom, button or common white, chopped (~24 2/3 tbsp)
4 cups spinach, baby
1 cup cheese, ricotta, part skim milk
1/4 tsp nutmeg
1 cup cheese, mozzarella, low sodium, shredded

Instructions:
Prep
Preheat the oven to 400F.
Cooking
Cook pasta according to package directions until "al dente".
Drain and rinse with cool water.
Heat a medium sized pan with oil over medium high heat.
Add the onion and saute for 2 minutes.
Add the turkey and cook for 5 minutes.
Add the tomato sauce, italian seasoning mix, pepper, garlic powder and mushrooms, simmer for 2 minutes.
Remove pan from heat.
In a bowl, combine spinach, ricotta, and nutmeg.
Bring a large pot of salted water to boil.
Coat a 8" x 8" glass baking dish with cooking spray.
Arrange 1/3 lasagna noodles on the bottom of the pan.
Spread a layer of ricotta mixture, then turkey mixture, then 1/3 mozzarella.
Repeat layers, ending with mozzarella.
Bake 20 to 25 minutes or until cheese bubbles.
Cool at least 5 minutes before cutting.
