Ingredients:
  • 4 oz pasta, lasagna, whole wheat
  • 2 tsp canola oil
  • 1 tsp cooking oil spray
  • 1 onion, yellow, chopped (~11 tbsp)
  • 8 oz turkey, ground lean1
  • 1 1/2 cups tomato sauce, no salt added
  • 2 1/4 tsp italian seasoning mix
  • 1/2 tsp pepper, black freshly ground
  • 1/2 tsp garlic powder
  • 6 mushroom, button or common white, chopped (~24 2/3 tbsp)
  • 4 cups spinach, baby
  • 1 cup cheese, ricotta, part skim milk
  • 1/4 tsp nutmeg
  • 1 cup cheese, mozzarella, low sodium, shredded
  1. Alternatives would be: chicken, ground lean
Instructions:
  1. Prep
    1. Preheat the oven to 400F.
  2. Cooking
    1. Cook pasta according to package directions until "al dente".
    2. Drain and rinse with cool water.
    3. Heat a medium sized pan with oil over medium high heat.
    4. Add the onion and saute for 2 minutes.
    5. Add the turkey and cook for 5 minutes.
    6. Add the tomato sauce, italian seasoning mix, pepper, garlic powder and mushrooms, simmer for 2 minutes.
    7. Remove pan from heat.
    8. In a bowl, combine spinach, ricotta, and nutmeg.
    9. Bring a large pot of salted water to boil.
    10. Coat a 8" x 8" glass baking dish with cooking spray.
    11. Arrange 1/3 lasagna noodles on the bottom of the pan.
    12. Spread a layer of ricotta mixture, then turkey mixture, then 1/3 mozzarella.
    13. Repeat layers, ending with mozzarella.
    14. Bake 20 to 25 minutes or until cheese bubbles.
    15. Cool at least 5 minutes before cutting.
