Turkey Cutlets with Lemon Honey

Ingredients:
1 tbsp canola oil
12 oz turkey breast, skinless, boneless, cut into 4 cutlets
1/4 tsp salt, sea
1/2 tsp pepper, black freshly ground
4 shallots, thinly sliced (~1/2 cup)
2 cloves garlic, minced (~2 tsp)
2 tbsp honey
2 tsp lemon zest
2 tbsp lemon juice
2 tsp orange zest
2 tbsp orange juice, fresh
Instructions:
Cooking
Heat the oil in a pan over medium heat.
Season the turkey with half of the salt and pepper.
Add the turkey cutlets and saute until cooked through, about 3 minutes per side.
Remove to a plate and cover top keep warm.
Add the shallots and garlic to the pan and saute, stirring for 2 minutes.
Add the honey, lemon and orange zests, lemon and orange juices to the pan.
Add remaining salt and pepper, bring to a boil and simmer for 2 minutes.
Serve the turkey cutlets with the sauce poured over top.
