Ingredients:
4 oz cheese, cream, low fat, softened (~1/2 cup)
1/2 cup beans, black canned, without salt, rinsed, drained and mashed
1/2 pepper, red, seeded, finely chopped
2 tbsp chipotle, canned in adobo sauce, chopped
1 onion, green / scallion, thinly sliced
1/4 tsp cumin, ground
3/4 tsp coriander, ground
1/4 tsp salt, kosher
4 tortilla, whole wheat
Instructions:
Prep
Preheat the oven to 350F.
Beat the cream cheese in a mixing bowl until soft.
Add the remaining ingredients except for the tortillas and mix together.
Cooking
Wrap the tortillas in foil and bake in the oven for 5 minutes until warmed.
Remove the tortillas from the oven.
Work with one tortilla at a time and re-wrap the remaining in the foil to keep warm.
Spread 1/4 of the cream cheese mixture over the entire top of the tortilla.
Roll the tortilla up, so that it resembles a jelly roll, and place on a cutting board seam side down.
Place four toothpicks evenly spaced in the tortilla roll and slice into 4 portions between the toothpicks.
Repeat with remaining tortillas and cream cheese.
Return to the oven for 5 minutes until warm and serve.
