Ingredients:
  • 4 oz cheese, cream, low fat, softened (~1/2 cup)
  • 1/2 cup beans, black canned, without salt, rinsed, drained and mashed
  • 1/2 pepper, red, seeded, finely chopped
  • 2 tbsp chipotle, canned in adobo sauce, chopped
  • 1 onion, green / scallion, thinly sliced
  • 1/4 tsp cumin, ground
  • 3/4 tsp coriander, ground
  • 1/4 tsp salt, kosher
  • 4 tortilla, whole wheat
Instructions:
  1. Prep
    1. Preheat the oven to 350F.
    2. Beat the cream cheese in a mixing bowl until soft.
    3. Add the remaining ingredients except for the tortillas and mix together.
  2. Cooking
    1. Wrap the tortillas in foil and bake in the oven for 5 minutes until warmed.
    2. Remove the tortillas from the oven.
    3. Work with one tortilla at a time and re-wrap the remaining in the foil to keep warm.
    4. Spread 1/4 of the cream cheese mixture over the entire top of the tortilla.
    5. Roll the tortilla up, so that it resembles a jelly roll, and place on a cutting board seam side down.
    6. Place four toothpicks evenly spaced in the tortilla roll and slice into 4 portions between the toothpicks.
    7. Repeat with remaining tortillas and cream cheese.
    8. Return to the oven for 5 minutes until warm and serve.
