Ingredients:
1 tbsp olive oil
10 oz beef, tenderloin, cut into 1 inch cubes
1 onion, yellow, sliced thin (~2/3 cup)
2 cloves garlic, minced (~2 tsp)
3 1/2 cups tomatoes, canned whole, no salt added, crushed
2 tsp oregano, fresh, chopped
1/2 tsp salt, sea
1/4 tsp pepper, black freshly ground
Instructions:
Cooking
Heat oil in a pan over medium high heat.
Saute beef 2-3 minutes, stirring constantly, until browned.
Transfer to a platter and cover to keep warm.
Add onion and garlic to same pan.
Saute 3 minutes or until onion begins to soften.
Return beef and remaining ingredients to the pan.
Reduce heat to medium low.
Cover and simmer 10 minutes.
Uncover and simmer for 10 more minutes or until sauce has thickened and beef is tender.
