Ingredients:
  • 2 pita, whole wheat 6 1/2" diameter
  • 1/4 cup olive oil
  • 1 head lettuce, romaine, torn into pieces
  • 1 cucumber, english, cut into cubes (~3 cups)
  • 12 tomatoes, cherry, halved (~1 1/4 cups)
  • 4 onion, green / scallion, sliced
  • 1 pepper, yellow, cut into 1/2" pieces (~1 1/4 cups)
  • 1 pepper, red, cut into 1/2" pieces (~3/4 cup)
  • 1/2 cup parsley, fresh italian / flat leaf, chopped
  • 12 olives, kalamata, pitted and chopped (~2/3 cup, chopped)
  • 2 tsp lemon zest
  • 3 tbsp lemon juice
  • 1 cloves garlic, minced
  • 1/2 tsp caraway seed, ground
  • 1/2 tsp coriander, seed, crushed
  • 1/4 cup mint, fresh, torn
Instructions:
  1. Prep
    1. Preheat the oven to 350F.
    2. Use a 1/2 tsp olive oil to brush both sides of the pitas.
  2. Cooking
    1. Place the pitas on a baking sheet and bake until crisp, about 15 minutes.
    2. Allow to cool and then break into pieces.
    3. Meanwhile, prepare the remaining ingredients for the salad.
    4. Whisk together the remaining olive oil, lemon zest, lemon juice, garlic, caraway and coriander.
    5. Combine all the salad ingredients, including the pita pieces but not the mint.
    6. Pour the dressing over the salad. Toss well.
    7. Top with mint.
