Braised Tilapia with Tomatoes and Asparagus

Ingredients:
1 bunch cilantro, fresh, chopped (~12 1/2 cups)
3 cloves garlic, minced (~1 tbsp)
2 tomatoes, hot house, sliced
8 oz asparagus, trimmed (~14 1/4 spear)
4 fillet fish, tilapia, fresh or frozen
1
2 tbsp olive oil
1 tbsp paprika, sweet
1 tsp cumin, ground
3/4 cup chicken broth, canned, low sodium
1/2 cup water
1 tsp turmeric, ground
1/2 tsp pepper, black freshly ground
1/4 tsp salt, sea
Alternatives would be:
fish, halibut, fresh
Instructions:
Prep
Spread cilantro evenly over bottom of a heavy pot.
Sprinkle with garlic.
Arrange tomatoes over.
Top with asparagus in a single layer.
Set fish atop asparagus.
Whisk oil, paprika, cumin, chicken broth, water, turmeric, salt and pepper to blend in small bowl.
Pour over fish.
Cooking
Bring broth to boil over high heat.
Cover pot, reduce heat to medium low and simmer until fish is just cooked through, about 10 minutes.
Using large spatula, transfer fish and vegetables to platter.
Spoon some cooking liquid over and serve.
