Ingredients:
  • 1 1/2 tbsp canola oil
  • 2 tbsp soy sauce, low sodium
  • 3 tbsp lemon juice
  • 2 tsp ginger, fresh, peeled, grated
  • 2 cloves garlic, minced (~2 tsp)
  • 16 shrimp, large frozen, thawed, peeled and deveined (~4 oz)
  • 1/4 cup orange marmalade
  • 1 tsp cornstarch
  • 1 tbsp water
Instructions:
  1. Prep
    1. Preheat the broiler.
    2. Combine the canola oil, 3/4 of the soy sauce, half the lemon juice, half the ginger and half of the garlic in a bowl.
    3. Add shrimp and marinate for at least 10 minutes.
  2. Cooking
    1. Thread shrimp on skewers and broil, turning over once, until opaque, about 5 minutes.
    2. In a small pot, combine the orange marmalade with the remaining soy sauce, lemon juice and grated ginger and garlic; bring to a boil.
    3. Dissolve cornstarch in water and add to marmalade.
    4. Stir just until sauce thickens, about 2 minutes.
    5. To serve, place shrimp on a platter and serve dipping sauce in a bowl.
