Ingredients:
1 1/2 tbsp canola oil
2 tbsp soy sauce, low sodium
3 tbsp lemon juice
2 tsp ginger, fresh, peeled, grated
2 cloves garlic, minced (~2 tsp)
16 shrimp, large frozen, thawed, peeled and deveined (~4 oz)
1/4 cup orange marmalade
1 tsp cornstarch
1 tbsp water
Instructions:
Prep
Preheat the broiler.
Combine the canola oil, 3/4 of the soy sauce, half the lemon juice, half the ginger and half of the garlic in a bowl.
Add shrimp and marinate for at least 10 minutes.
Cooking
Thread shrimp on skewers and broil, turning over once, until opaque, about 5 minutes.
In a small pot, combine the orange marmalade with the remaining soy sauce, lemon juice and grated ginger and garlic; bring to a boil.
Dissolve cornstarch in water and add to marmalade.
Stir just until sauce thickens, about 2 minutes.
To serve, place shrimp on a platter and serve dipping sauce in a bowl.
