Spicy Thai Cucumber Salad

Ingredients:
2 cucumber, english, diced (~5 3/4 cups)
1/4 tsp salt, kosher
2 tbsp canola oil
1 tsp cumin, ground
1/8 tsp cayenne powder
1/3 cup peanuts, toasted, coarsely chopped
2 tbsp lemon juice
2 tsp sugar, white granulated
1 tbsp cilantro, fresh, chopped
Instructions:
Prep
Mix together salt and cucumber, and allow to drain in a colander for ten minutes to release water.
Pat dry, and place in a medium size bowl.
Cooking
Heat oil in a small pan over medium heat.
Stir in cumin and cayenne.
Add peanuts, lemon juice, sugar, to the pan.
Cook for 1 minute.
Pour the oil and peanut mixture over top of the cucumbers.
Add cilantro and toss.
