Ingredients:
  • 2 cucumber, english, diced (~5 3/4 cups)
  • 1/4 tsp salt, kosher
  • 2 tbsp canola oil
  • 1 tsp cumin, ground
  • 1/8 tsp cayenne powder
  • 1/3 cup peanuts, toasted, coarsely chopped
  • 2 tbsp lemon juice
  • 2 tsp sugar, white granulated
  • 1 tbsp cilantro, fresh, chopped
Instructions:
  1. Prep
    1. Mix together salt and cucumber, and allow to drain in a colander for ten minutes to release water.
    2. Pat dry, and place in a medium size bowl.
  2. Cooking
    1. Heat oil in a small pan over medium heat.
    2. Stir in cumin and cayenne.
    3. Add peanuts, lemon juice, sugar, to the pan.
    4. Cook for 1 minute.
    5. Pour the oil and peanut mixture over top of the cucumbers.
    6. Add cilantro and toss.
