Ingredients:
1 1/2 tbsp peanut oil
2 tsp ginger, fresh, peeled, grated
2 cloves garlic, minced (~2 tsp)
4 onion, green / scallion, finely chopped (~2/3 cup)
32 shrimp, frozen uncooked, thawed, shelled and deveined (~6 3/4 oz)
1 tbsp tomato paste, without salt added
2 tsp chili garlic sauce
2 tsp vinegar, rice
1 1/2 tsp soy sauce, low sodium
1/2 tsp pepper, black freshly ground, 1/2 teaspoon freshly ground black pepper
2 tsp sugar, white granulated
2 tsp sesame oil
4 sprigs cilantro, fresh, picked
Instructions:
Cooking
Heat the peanut oil in a wok over high heat until smoking.
Add the ginger, garlic, and green onions and stir fry for 20 seconds.
Add the shrimp and stir fry for about 1 minutes.
Add the remaining ingredients except the cilantro and continue to stir fry for another 3 minutes over a high heat.
Garnish with cilantro and serve at once.
