Ingredients:
1 tbsp butter, unsalted
1/2 onion, yellow, finely chopped (~1/3 cup)
1/2 peppers, green, finely chopped (~1/3 cup)
2 cloves garlic, minced (~2 tsp)
1/2 cup cheese, cottage, low fat, no sodium added
1 tsp Worcestershire sauce
1/4 cup bread crumbs, Italian
16 mushroom, button or common white, stems removed (~10 1/4 oz)
1 tsp cooking oil spray
2 tbsp cheese, Parmesan, low sodium, grated
Instructions:
Prep
Preheat the oven to 350F.
Cooking
Melt the butter in a non stick pan over medium high heat.
Add the onion, green pepper and garlic and saute for 5 minutes until soft.
Stir in cottage cheese and Worcestershire sauce, stirring until cheese melts.
Remove from the heat and stir in the bread crumbs.
Spoon mixture evenly into mushroom caps.
Spray a baking dish with cooking spray.
Place the mushroom caps in the baking dish, filling side up and bake for 20 minutes until tender.
Sprinkle with Parmesan and serve.
