Ingredients:
  • 1 tbsp canola oil
  • 1 tsp coriander, ground
  • 1/4 tsp cayenne powder
  • 1/4 tsp cumin, ground
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 8 oz beef, top sirloin, cut into thin strips
  • 6 oz beans, refried canned, no salt added (~2/3 cup)
  • 4 tortilla, flour
  • 1 oz cheese, cheddar, low sodium, grated (~1/4 cup)
  • 3 tbsp onion, green / scallion, thinly sliced
  • 5 oz tomato salsa, chunky hot (~1/2 cup)
  • 1/2 cup cheese, monterey jack, low fat, grated
Instructions:
  1. Cooking
    1. Preheat oven to 400°F.
    2. Heat canola oil in a large pan over medium high heat.
    3. Stir in coriander, cayenne, cumin, garlic powder and onion powder.
    4. Add beef strips; cook 2 minutes, stirring occasionally, until desired doneness.
    5. Meanwhile, place re-fried beans in microwavable dish. Microwave uncovered on High 30 seconds.
    6. Spread each tortilla with re-fried beans to within 1/4 inch of edge.
    7. Top each with beef, cheddar cheese, green onions and salsa.
    8. Roll up, folding in sides.
    9. In 13"x9" glass baking dish, place burritos with seam sides down.
    10. Sprinkle with Monterrey Jack cheese.
    11. Bake uncovered 7 minutes or until burritos are thoroughly heated and cheese is melted.
