Ingredients:
2 pita, whole wheat 6 1/2" diameter
1 tsp olive oil
1/2 pepper, red, sliced thin (~1/3 cup)
1/2 pepper, yellow, sliced thin (~2/3 cup)
1/4 onion, red, sliced thin (~2/3 cup)
4 mushroom, button or common white, thinly sliced (~1 cup)
1/4 cup tomato sauce, no salt added
1/2 tsp red pepper flakes
1/4 tsp salt, sea
1 tbsp basil, fresh, chopped
1/2 cup spinach, frozen chopped, thawed, squeezed to extract moisture
1/2 cup cheese, mozzarella, low sodium, grated
Instructions:
Prep
Preheat the oven to 400F.
Cooking
Place the pita bread on a baking sheet and bake for 5 minutes.
Heat the oil in a non stick pan over medium heat.
Add the peppers, onion and mushrooms and cook, stirring until softened but still crispy, about 3 minutes.
Combine the tomato sauce, red pepper flakes, salt and basil; spread atop the pitas.
Top with spinach, followed by the sauteed vegetables and then the cheese.
Bake in the oven for 10 minutes, until cheese melts and pizzas are lightly browned.
Cut in half and serve.
