Ingredients:
4 cups chicken broth, canned, low sodium
1/2 cup water
1/3 cup tomato paste, without salt added
1/2 tsp lemon zest
1/2 cup orzo
7 cups spinach, baby, chopped
2 onion, green / scallion, sliced thin (~1/3 cup)
1/4 tsp pepper, black freshly ground
Instructions:
Cooking
Place the chicken broth in a pot over medium high heat.
Whisk in the water, tomato paste and lemon zest until smooth.
Bring to a boil and add the orzo.
Reduce the heat and simmer for 7 minutes until orzo is cooked.
Add the chopped spinach and green onion and cook for 2 minutes.
Season with pepper and serve.
