Ingredients:
  • 4 cups chicken broth, canned, low sodium
  • 1/2 cup water
  • 1/3 cup tomato paste, without salt added
  • 1/2 tsp lemon zest
  • 1/2 cup orzo
  • 7 cups spinach, baby, chopped
  • 2 onion, green / scallion, sliced thin (~1/3 cup)
  • 1/4 tsp pepper, black freshly ground
Instructions:
  1. Cooking
    1. Place the chicken broth in a pot over medium high heat.
    2. Whisk in the water, tomato paste and lemon zest until smooth.
    3. Bring to a boil and add the orzo.
    4. Reduce the heat and simmer for 7 minutes until orzo is cooked.
    5. Add the chopped spinach and green onion and cook for 2 minutes.
    6. Season with pepper and serve.
