Ingredients:
6 oz spinach, frozen chopped, thawed (~1 cup)
3 water chestnuts, whole (~2 1/3 tbsp)
1 onion, green / scallion, minced
1/4 cup sour cream, fat free
2 tbsp mayonnaise, reduced-calorie, cholesterol-free
1 tbsp parsley, fresh italian / flat leaf, chopped
1/2 tsp dill, dried
1/8 tsp celery seed
1/2 tsp salt, sea
1/4 tsp pepper, black freshly ground
20 crackers, whole wheat, low salt
Instructions:
Prep
Place the thawed spinach in a colander and rinse with water.
Using your hands, gently squeeze out as much water as you can.
Place the water chestnuts in a food processor and pulse until chopped.
Add the spinach, onion, sour cream, mayonnaise, parsley, dill, celery seed, salt and pepper.
Puree until smooth, scraping the sides of the bowl to incorporate all the ingredients thoroughly.
Serve with crackers.
