Ingredients:
1 1/2 tbsp butter, unsalted, room temperature
1/2 tsp paprika, sweet
1/4 tsp oregano, dried flakes
1/4 tsp cumin, ground
1/4 tsp pepper, black freshly ground
1/8 tsp cayenne powder
1/8 tsp salt, sea
2 tsp canola oil
1 onion, yellow, chopped (~2/3 cup)
1/4 tsp sugar, white granulated
3 cups corn, frozen whole kernels, thawed
1 pepper jalapeno, seeded, finely diced (~2 1/2 tbsp)
Instructions:
Prep
Mix together the butter, paprika, oregano, cumin, pepper, cayenne and salt.
Cooking
Heat the oil in a pan over high heat for 2 minutes.
Add the onion and cook, stirring constantly for 2 minutes.
Reduce the heat to medium and add the sugar.
Cook for 2 minutes, stirring, until onions are golden brown.
Add the corn and jalapenos and cook for 3 minutes, stirring.
Remove the pan from the heat and add the butter mixture.
Allow butter to melt and serve.
