Ingredients:
  • 1 1/2 tbsp butter, unsalted, room temperature
  • 1/2 tsp paprika, sweet
  • 1/4 tsp oregano, dried flakes
  • 1/4 tsp cumin, ground
  • 1/4 tsp pepper, black freshly ground
  • 1/8 tsp cayenne powder
  • 1/8 tsp salt, sea
  • 2 tsp canola oil
  • 1 onion, yellow, chopped (~2/3 cup)
  • 1/4 tsp sugar, white granulated
  • 3 cups corn, frozen whole kernels, thawed
  • 1 pepper jalapeno, seeded, finely diced (~2 1/2 tbsp)
Instructions:
  1. Prep
    1. Mix together the butter, paprika, oregano, cumin, pepper, cayenne and salt.
  2. Cooking
    1. Heat the oil in a pan over high heat for 2 minutes.
    2. Add the onion and cook, stirring constantly for 2 minutes.
    3. Reduce the heat to medium and add the sugar.
    4. Cook for 2 minutes, stirring, until onions are golden brown.
    5. Add the corn and jalapenos and cook for 3 minutes, stirring.
    6. Remove the pan from the heat and add the butter mixture.
    7. Allow butter to melt and serve.
