Ingredients:
  • 1 tbsp curry powder, hot
  • 1 tsp cumin, ground
  • 1/4 tsp salt, sea
  • 1/4 tsp cinnamon, ground
  • 2 tsp canola oil
  • 1 lb pork, tenderloin, trimmed of fat
Instructions:
  1. Prep
    1. Place a rack 6" from the broiler.
    2. Preheat the broiler.
    3. Combine the curry, cumin, salt cinnamon and oil.
    4. Rub the pork with the spice mixture.
  2. Cooking
    1. Place the pork on a broiling rack and broil, turning once until temperature reaches 155F, about 15 minutes.
    2. Remove pork to a cutting board and let stand 5 minutes before slicing.
    3. Slice pork into 1/4" thick pieces and serve.
