Ingredients:
1 tbsp curry powder, hot
1 tsp cumin, ground
1/4 tsp salt, sea
1/4 tsp cinnamon, ground
2 tsp canola oil
1 lb pork, tenderloin, trimmed of fat
Instructions:
Prep
Place a rack 6" from the broiler.
Preheat the broiler.
Combine the curry, cumin, salt cinnamon and oil.
Rub the pork with the spice mixture.
Cooking
Place the pork on a broiling rack and broil, turning once until temperature reaches 155F, about 15 minutes.
Remove pork to a cutting board and let stand 5 minutes before slicing.
Slice pork into 1/4" thick pieces and serve.
