Ingredients:
  • 2 lime, peeled and segmented
  • 1/2 tsp salt, sea
  • 1/4 tsp pepper, black freshly ground
  • 3 tbsp parsley, fresh italian / flat leaf, whole leaves
  • 1 1/2 tbsp olive oil
  • 2 shallots, finely minced (~1/4 cup)
  • 20 shrimp, fresh, peeled, deveined1
  • 1 lettuce, Boston, washed, dried, shredded (~3 cups)
  • 1 avocado, cut into 8 pieces
  • 16 tomatoes, cherry (~1 1/2 cups)
  1. Alternatives would be: shrimp, frozen uncooked
Instructions:
  1. Prep
    1. Put 3/4 of the lime segments, the salt, pepper, parsley, 2/3 of the olive oil and shallots in a bowl.
    2. Stir to combine.
    3. Squeeze the juice from the remaining lime into the bowl.
  2. Cooking
    1. Heat the remaining olive oil in a pan over medium high heat.
    2. Add the shrimp and saute for 1 minute on each side.
    3. Arrange some lettuce, avocado, cherry tomatoes and shrimp on four plates and drizzle with dressing.
