Ingredients:
2 lime, peeled and segmented
1/2 tsp salt, sea
1/4 tsp pepper, black freshly ground
3 tbsp parsley, fresh italian / flat leaf, whole leaves
1 1/2 tbsp olive oil
2 shallots, finely minced (~1/4 cup)
20 shrimp, fresh, peeled, deveined
1
1 lettuce, Boston, washed, dried, shredded (~3 cups)
1 avocado, cut into 8 pieces
16 tomatoes, cherry (~1 1/2 cups)
Alternatives would be:
shrimp, frozen uncooked
Instructions:
Prep
Put 3/4 of the lime segments, the salt, pepper, parsley, 2/3 of the olive oil and shallots in a bowl.
Stir to combine.
Squeeze the juice from the remaining lime into the bowl.
Cooking
Heat the remaining olive oil in a pan over medium high heat.
Add the shrimp and saute for 1 minute on each side.
Arrange some lettuce, avocado, cherry tomatoes and shrimp on four plates and drizzle with dressing.
