Steamed Salmon with Orange and Tarragon

Ingredients:
2 fillet fish, salmon, fresh
4 cups orange juice, fresh
2 onion, red, chopped (~5 1/2 cups)
2 cloves garlic, minced (~2 tsp)
1 tbsp olive oil
2 tbsp capers
1/2 cup currants, dried
2 tbsp tarragon, fresh, chopped
Instructions:
Prep
Cut the salmon fillets in half for 3oz portions.
Cooking
In a pot with a tight fitting lid, add the orange juice, onion, garlic, olive oil, capers and currants.
Bring to a boil, lower the heat to medium high and allow the liquid to reduce by half, about 7 minutes.
Place the salmon fillets in the pot and reduce the heat to low.
Cover and steam the salmon for 8 minutes until cooked.
Remove the salmon and add the tarragon to the orange mixture.
Serve by pouring sauce over top of salmon.
