Roasted Pepper and Zucchini Salad

Ingredients:
1 lb tofu, firm, cut into 1" cubes (~1 3/4 cup, cubed)
2 tbsp olive oil
1 pepper, red, chopped into 1/2" pieces
1 pepper, yellow, chopped into 1/2" pieces
1 onion, yellow, cut into wedges
1 zucchini, green, cut in half and then into 1" long pieces

4 cloves garlic, minced
1/2 cup wine, white dry
1/3 cup, chopped olives, kalamata
1/4 cup basil, fresh, chopped
1/4 cup parsley, fresh italian / flat leaf, chopped
1/4 tsp salt, sea
1/4 tsp pepper, black freshly ground
3 tbsp vinegar, red wine
1 tbsp tomato paste, without salt added
1 1/2 tsp Dijon mustard
1 tbsp sugar, white granulated
2 tsp soy sauce, low sodium
1/4 tsp cooking oil spray
Instructions:
Prep
Preheat the oven to 400F.
Cooking
Heat half of the oil in a non stick pan over medium high heat.
Add the tofu and cook until browned on all sides, about 3 minutes.
Remove and place on a paper towel to drain off any oil.
Add the peppers and onions to the pan and saute for 2 minutes.
Add the zucchinis and garlic and saute for 3 minutes.
Add the wine, olives, half of the fresh herbs, salt, and pepper, reduce the heat to low, and simmer for 5 minutes.
Combine the remaining olive oil with the vinegar, tomato paste, Dijon, soy and sugar.
Add the remaining herbs and stir to combine.
Spray a a 9" x 13" baking dish with cooking oil spray.
Spread the sauteed vegetable mixture in the bottom of the pan.
Place the tofu over the top of the vegetables and pour the reserved red wine vinegar mixture over the tofu.
Cover the baking dish with a piece of aluminum foil and bake for 20 minutes and serve.
