Ingredients:
  • 4 cups rhubarb, fresh
  • 1/2 cup water
  • 1/3 cup sugar, white granulated
  • 1/3 cup jam, strawberry
  • 2 tbsp orange liqueur
  • 1/2 tsp ginger powder
  • 1/2 tsp cinnamon, ground
  • 1 cup strawberries, fresh
  • 1 cup blackberries
Instructions:
  1. Cooking
    1. Place the rhubarb in a large saucepan.
    2. Stir in water, sugar, jam, liqueur, ginger and cinnamon.
    3. Stir often over medium heat until sugar dissolves and jam is melted, 2 to 3 minutes.
    4. Bring to a boil, then reduce heat to low.
    5. Cover and simmer until softened, about 8 minutes. Stir often.
    6. Once rhubarb has simmered, stir in strawberries and blackberries.
    7. Increase heat to medium. Cover and simmer until berries have softened a little, about 3 minutes.
    8. Remove from heat and set aside, uncovered. Compote thickens as it cools.
