Roasted Red Potatoes with Sherry Vinegar and Thyme

Ingredients:
1 onion, red, cut into wedges 1" thick
1 1/4 lb potatoes, small red (baby), scrubbed, halved (~11 1/3)
3 tbsp vinegar, Sherry
2 tbsp olive oil
1/2 tsp salt, sea
1/4 tsp pepper, black freshly ground
2 tbsp thyme, fresh, chopped
Instructions:
Prep
Preheat oven to 450F.
Cooking
Combine the onions, potatoes, sherry vinegar, olive oil, salt and pepper.
Spread onto a baking sheet in a single layer, potatoes cut side down.
Roast for 20 minutes, then turn the potatoes cut side up and sprinkle with thyme.
Return to the oven and roast for another 5 minutes.
