Ingredients:
  • 1 onion, red, cut into wedges 1" thick
  • 1 1/4 lb potatoes, small red (baby), scrubbed, halved (~11 1/3)
  • 3 tbsp vinegar, Sherry
  • 2 tbsp olive oil
  • 1/2 tsp salt, sea
  • 1/4 tsp pepper, black freshly ground
  • 2 tbsp thyme, fresh, chopped
Instructions:
  1. Prep
    1. Preheat oven to 450F.
  2. Cooking
    1. Combine the onions, potatoes, sherry vinegar, olive oil, salt and pepper.
    2. Spread onto a baking sheet in a single layer, potatoes cut side down.
    3. Roast for 20 minutes, then turn the potatoes cut side up and sprinkle with thyme.
    4. Return to the oven and roast for another 5 minutes.
