Ingredients:
1 tsp olive oil
1/4 peppers, green, chopped (~3 1/4 tbsp)
1 celery stalk, chopped (~1/3 cup)
1/4 onion, yellow, chopped (~2 3/4 tbsp)
1 clove garlic, minced (~1 tsp)
1 cup vegetable broth, canned low sodium
1 cup beans, red kidney canned without salt, rinsed, drained
1 tsp cajun seasoning mix
3/4 cup couscous
Instructions:
Cooking
Heat the oil in a non stick pan over medium high heat.
Add the green pepper, celery, onion and garlic and saute for 3 minutes, stirring occasionally.
Add the broth, beans and Cajun seasoning.
Bring to a boil, reduce the heat and simmer for 2 minutes.
Stir in the couscous and remove from the heat and cover.
Let stand for 5 minutes, fluff with a fork and serve.
