Ingredients:
12 oz pork, loin, boneless, trimmed of fat
4 tortilla, flour
1 peppers, green, sliced into thin cirlces (~3/4 cup)
1 onion, red, sliced into thin circles (~2 3/4 cups)
2 cloves garlic, minced (~2 tsp)
1 tsp thyme, dried
1 tsp cumin, ground
1 tsp coriander, ground
1 tsp oregano, dried flakes
1 tsp chili powder
1 tsp Tabasco
1/4 cup lemon juice
2 leaf inner lettuce, green leaf, sliced
1 pepper jalapeno, sliced thin (~2 1/2 tbsp)
2 tbsp tomato salsa, chunky hot
1/4 cup cheese, monterey jack, low fat, grated
1 1/2 tsp sour cream, fat free
Instructions:
Prep
Preheat the oven to 400F.
Slice the pork into 1/4" thin strips.
Cooking
Heat the tortilla shells in the oven wrapped in foil until pliable, approximately 8 minutes.
Heat a cast iron pan over high heat.
Once the pan is very hot add the pork and cook 2 minutes then add the onion slices, garlic, green pepper rounds and dried spices.
Cook for 5 minutes stirring constantly then add the lemon juice and Tabasco. Cook until lemon juice has evaporated, about 2 minutes.
To serve, remove the tortillas from the foil and top each with pork mixture and lettuce, salsa, cheese, jalapenos and sour cream.
