Ingredients:
  • 12 oz pork, loin, boneless, trimmed of fat
  • 4 tortilla, flour
  • 1 peppers, green, sliced into thin cirlces (~3/4 cup)
  • 1 onion, red, sliced into thin circles (~2 3/4 cups)
  • 2 cloves garlic, minced (~2 tsp)
  • 1 tsp thyme, dried
  • 1 tsp cumin, ground
  • 1 tsp coriander, ground
  • 1 tsp oregano, dried flakes
  • 1 tsp chili powder
  • 1 tsp Tabasco
  • 1/4 cup lemon juice
  • 2 leaf inner lettuce, green leaf, sliced
  • 1 pepper jalapeno, sliced thin (~2 1/2 tbsp)
  • 2 tbsp tomato salsa, chunky hot
  • 1/4 cup cheese, monterey jack, low fat, grated
  • 1 1/2 tsp sour cream, fat free
Instructions:
  1. Prep
    1. Preheat the oven to 400F.
    2. Slice the pork into 1/4" thin strips.
  2. Cooking
    1. Heat the tortilla shells in the oven wrapped in foil until pliable, approximately 8 minutes.
    2. Heat a cast iron pan over high heat.
    3. Once the pan is very hot add the pork and cook 2 minutes then add the onion slices, garlic, green pepper rounds and dried spices.
    4. Cook for 5 minutes stirring constantly then add the lemon juice and Tabasco. Cook until lemon juice has evaporated, about 2 minutes.
    5. To serve, remove the tortillas from the foil and top each with pork mixture and lettuce, salsa, cheese, jalapenos and sour cream.
