Ingredients:
  • 1 mango, diced (~1 1/4 cups)
  • 2 cups pineapple, fresh
  • 1/4 onion, red, diced (~2/3 cup)
  • 1/4 tsp nutmeg 
  • 2 1/2 tbsp lime juice
  • 1/4 cup mint, fresh, chopped
  • 2 tbsp Dijon mustard 
  • 1 tbsp orange juice, fresh
  • 1 tbsp honey
  • 4 pork, loin chop, blade, bone in
  • 1/2 tsp salt, kosher
  • 1/2 tsp pepper, black freshly ground
Instructions:
  1. Prep
    1. Preheat broiler.
    2. Peel and dice the mango and pineapple.
    3. Mix together with the diced onion, nutmeg, lime juice and mint.
    4. Mix the Dijon mustard with the orange juice and honey.
    5. Season the pork chops with salt and pepper.
  2. Cooking
    1. Place the pork chops on a broiler pan and broil for 8 minutes, turning over once.
    2. Spread the Dijon, honey mixture on top of pork chops and return to broiler for an additional 4 minutes or until chops are cooked and glaze is bubbling.
    3. Serve topped with salsa.
