- 1 mango, diced (~1 1/4 cups)
- 2 cups pineapple, fresh
- 1/4 onion, red, diced (~2/3 cup)
- 1/4 tsp nutmeg ♦
- 2 1/2 tbsp lime juice
- 1/4 cup mint, fresh, chopped
- 2 tbsp Dijon mustard ♦
- 1 tbsp orange juice, fresh
- 1 tbsp honey
- 4 pork, loin chop, blade, bone in
- 1/2 tsp salt, kosher
- 1/2 tsp pepper, black freshly ground

- Prep
- Preheat broiler.
- Peel and dice the mango and pineapple.
- Mix together with the diced onion, nutmeg, lime juice and mint.
- Mix the Dijon mustard with the orange juice and honey.
- Season the pork chops with salt and pepper.
- Cooking
- Place the pork chops on a broiler pan and broil for 8 minutes, turning over once.
- Spread
the Dijon, honey mixture on top of pork chops and return to broiler for
an additional 4 minutes or until chops are cooked and glaze is
bubbling.
- Serve topped with salsa.
