Ingredients:
  • 1 1/2 cups beans, pinto canned no added salt, drained, rinsed
  • 1 tbsp chili powder
  • 1 cup peppers, roasted red, diced
  • 1 cup carrot, grated
  • 1/2 onion, red, finely diced (~1 1/3 cups)
  • 2 tbsp lime juice
  • 1 avocado, peeled, pitted, diced
  • 4 tortilla, whole wheat
  • 1 1/2 cups shredded lettuce, green leaf
Instructions:
  1. Prep
    1. Combine the rinsed beans, chili powder, diced roasted red pepper, carrots, onion and lime juice.
    2. Toss until well combined and the gently stir in the avocado.
    3. Wrap the tortillas in a tea towel or paper towel and microwave for 1 minutes until soft.
    4. Divide the bean mixture evenly among tortillas and top each with lettuce.
    5. Fold and serve.
