Ingredients:
1 lb beef, tenderloin, cut into 4 steaks
1 tbsp peppercorns, black
1 tbsp peppercorns, pink
1/4 tsp salt, sea
1 1/2 tsp canola oil
1 tbsp chopped chives, fresh
Instructions:
Prep
Mix the peppercorns together and crush them.
Coat the beef tenderloins with peppercorns and season with salt.
Cooking
Heat the oil in a pan over high heat until almost smoking.
Reduce the heat to medium.
Sear the beef for about 4 minutes on each side for medium rare, depending on the thickness.
Serve topped with chopped chives.
