Orzo with Cherry Tomatoes and Pinenuts

Ingredients:
12 oz orzo (~1 2/3 cups)
1 1/2 tbsp olive oil
1/4 cup pine nuts
3 cloves garlic, minced (~1 tbsp)
1/3 cup parsley, fresh italian / flat leaf, chopped
1/3 cup basil, fresh, chopped
1
3 tbsp vinegar, red wine
1/4 tsp salt, sea
1/4 tsp pepper, black freshly ground
12 oz tomatoes, cherry, quartered (~2 cups)
1/4 cup cheese, feta, crumbled

Instructions:
Prep
Bring a pot of salted water to a boil for orzo.
Cooking
In a pan heat 1 tablespoon oil over medium heat until hot but not smoking and saute pine nuts, stirring frequently, until golden, about 2 minutes.
Transfer nuts to paper towels to drain and cool.
In a bowl whisk together garlic, parsley, basil, mint (if using), vinegar, remaining oil, and salt and pepper.
Add tomatoes and feta and gently toss to combine.
Cook orzo in boiling water, stirring occasionally, until "al dente", about 10 minutes.
Drain orzo well and add to tomato mixture, tossing until just combined.
Serve orzo topped with nuts.
