Ingredients:
  • 3 potatoes, yukon gold (~4 1/4 cups)
  • 1/4 tsp salt, sea
  • 1/4 cup, chopped olives, kalamata
  • 1/3 cup olive oil
Instructions:
  1. Cooking
    1. Peel and cut the potatoes into quarters.
    2. Place the potato pieces in a pot of cold salted water.
    3. Bring to a boil and cook until potatoes are soft, about 20 minutes.
    4. Once cooked, mash the potatoes and add the olive oil and kalamata olive pieces.
