3 potatoes, yukon gold (~4 1/4 cups)
1/4 tsp salt, sea
1/4 cup, chopped olives, kalamata
1/3 cup olive oil
Instructions:
Cooking
Peel and cut the potatoes into quarters.
Place the potato pieces in a pot of cold salted water.
Bring to a boil and cook until potatoes are soft, about 20 minutes.
Once cooked, mash the potatoes and add the olive oil and kalamata olive pieces.
