Ingredients:
  • 8 oz sugar snap peas, trimmed (~2 1/3 cups)
  • 1 tbsp mint, fresh, leaves chopped
  • 1 tsp butter, unsalted
  • 1/4 tsp salt, sea
  • 1/4 tsp pepper, black freshly ground
Instructions:
  1. Cooking
    1. Bring a pot of salted water to the boil.
    2. Add the sugar snap peas and cook until just soft, about 4 minutes.
    3. Strain off and return to the pot.
    4. Add mint, butter, salt and pepper and toss to coat.
