8 oz sugar snap peas, trimmed (~2 1/3 cups)
1 tbsp mint, fresh, leaves chopped
1 tsp butter, unsalted
1/4 tsp salt, sea
1/4 tsp pepper, black freshly ground
Instructions:
Cooking
Bring a pot of salted water to the boil.
Add the sugar snap peas and cook until just soft, about 4 minutes.
Strain off and return to the pot.
Add mint, butter, salt and pepper and toss to coat.
