Ingredients:
  • 1 tsp ginger, fresh, peeled, thinly sliced
  • 1 cup water
  • 1/3 cup sugar, white granulated
  • 1/3 cup mint, fresh, coarsely chopped
  • 1 lb mango, peeled, pited, thinly sliced (~2 1/4)
Instructions:
  1. Cooking
    1. Place the ginger, water and sugar in a pot and bring to a boil.
    2. Reduce the heat and simmer for 5 minutes.
    3. Remove from the heat and add the mint.
    4. Allow to sit for 5 minutes.
    5. Strain the syrup into a bowl and cool completely.
    6. Add the thinly sliced mango to the syrup and chill for 20 minutes.
    7. Divide among serving dishes and garnish with mint sprigs if desired.
