Ingredients:
1 tsp ginger, fresh, peeled, thinly sliced
1 cup water
1/3 cup sugar, white granulated
1/3 cup mint, fresh, coarsely chopped
1 lb mango, peeled, pited, thinly sliced (~2 1/4)
Instructions:
Cooking
Place the ginger, water and sugar in a pot and bring to a boil.
Reduce the heat and simmer for 5 minutes.
Remove from the heat and add the mint.
Allow to sit for 5 minutes.
Strain the syrup into a bowl and cool completely.
Add the thinly sliced mango to the syrup and chill for 20 minutes.
Divide among serving dishes and garnish with mint sprigs if desired.
