Linguine with Mushrooms and Walnuts

Ingredients:
10 oz pasta, linguine, whole wheat
2 tbsp olive oil
2 zucchini, green, halved, sliced 1/4" thick (~3 1/4 cups)
1 onion, yellow, sliced thin (~2/3 cup)
8 oz mushroom, button or common white, sliced (~3 1/4 cups)
1 tbsp oregano, dried flakes
4 cloves garlic, minced (~1 1/2 tbsp)
1/4 tsp red pepper flakes
1/4 cup walnuts, chopped, roasted
1/4 tsp salt, sea
Instructions:
Cooking
Bring a pot of salted water to the boil and cook the pasta until "al dente", about 10 minutes.
Drain, reserving about 1/2 cup pasta water.
Meanwhile, heat a non stick pan over medium high heat.
Add one third of the olive oil along with the zucchini and onion and saute for 8 minutes, stirring frequently.
Remove to a plate.
Add half of the remaining olive oil to the pan along with the mushrooms, oregano, garlic and red pepper flakes.
Saute for 4 minutes.
Return the zucchini and onion mixture to the pan along with the reserved pasta water.
Cook for 30 seconds until water evaporates and remove the pan from the heat.
Stir in the walnuts, remaining olive oil and salt.
