3/4 cup panko bread crumbs

1 clove garlic, chopped (~1 tsp)
1/2 cup parsley, fresh italian / flat leaf, chopped
2 tbsp lemon zest
1 lemon
1/2 tsp salt, sea
1/4 tsp pepper, black freshly ground
2 tbsp olive oil
4 fillet fish, mahi mahi

Instructions:
Prep
Preheat the oven to 425F.
Place the bread crumbs, garlic, parsley, lemon zest, salt, pepper and half of the olive oil in a food processor and pulse until you have green bread crumbs, about 1 minute.
Cooking
Place the mahi mahi on a baking sheet and press the bread crumb mixture over top to adhere.
Drizzle with remaining olive oil and bake for 15 minutes until crust is golden and fish is cooked through.
