Ingredients:
  • 2 tbsp peanut oil
  • 1 1/2 lb leek, trimmed, washed, chopped (~7 2/3 cups)
  • 1 1/3 tbsp ginger, fresh, peeled, grated
  • 1 1/2 tsp soy sauce, low sodium
  • 1/4 tsp salt, sea
  • 1/4 tsp pepper, black freshly ground
Instructions:
  1. Cooking
    1. Heat the oil in a non stick pan over medium high heat until it is almost smoking.
    2. Add the leeks and let sit for 1 minute.
    3. Then stir fry for 4 minutes.
    4. Add the ginger, soy sauce salt and pepper and continue to cook for 2 minutes, stirring occasionally.
