Ingredients:
  • 2/3 cup cheese, Parmesan, low sodium, grated
  • 3 tbsp mayonnaise, reduced-calorie, cholesterol-free
  • 1 lb asparagus, peeled if large (~28 1/3 spear)
  • 2 tsp butter, unsalted, at room temperature
  • 8 slice, large (4-1/2" x 3-1/4" x 3/4") bread, ciabatta or italian
  • 4 oz ham, cooked, low sodium, sliced (~3/4 cup)
Instructions:
  1. Prep
    1. Place an oven rack 3" from the top of the oven.
    2. Preheat the broiler.
    3. Mix together the Parmesan and mayonnaise.
    4. Trim asparagus to fit bread.
  2. Cooking
    1. Steam the asparagus until just tender, about 3 minutes.
    2. Strain under cold running water.
    3. Drain and pat dry.
    4. Butter the tops of each slice of bread.
    5. Place on a baking sheet and broil for 2 minutes until browned.
    6. Turn the bread over and top half of the slices with ham, asparagus and Parmesan mixture.
    7. Broil for 2 minutes until golden.
