Ingredients:
3/4 cup Italian salad dressing, reduced fat, without salt
1/4 cup basil, fresh, chopped
1 bread, french baguette, whole wheat, cut into 4 portions
4 zucchini, green, sliced lengthwise into quarters and seeded
2 pepper, red, quartered
2 tomatoes, hot house, cut horizontally into 4 slices each
4 slice cheese, provolone
Instructions:
Prep
Preheat the barbecue.
Whisk together the dressing and chopped basil.
Brush cut side of each roll with 1/2 tablespoon dressing mixture.
Brush vegetables with remaining dressing mixture.
Cooking
Grill vegetables until tender and lightly charred, turning occasionally, about 10 minutes.
Grill the cut side of the baguette until toasted, about 2 minutes.
Arrange grilled vegetables on bread and top with cheese.
Allow the cheese to melt slightly and serve.
