Grilled Tomato and Goat Cheese Sandwiches

Ingredients:
1/4 cup olive oil
4 cloves garlic, minced
2 tbsp basil, fresh, chopped
1 tsp rosemary, fresh, chopped
1 tsp mint, fresh, chopped
1 tsp chopped chives, fresh
1 bread, french baguette, whole wheat, cut in half horizontally and lenghtwise forming 4 equal pieces
1/2 cup cheese, goat , soft (~3 1/2 oz)
4 tomatoes, plum, thinly sliced into rounds
2 olives, kalamata, coarsely chopped, pitted (~1/8 cup, chopped)
Instructions:
Prep
Preheat the barbecue.
Mix together the olive oil, garlic, basil, rosemary, mint and chives.
Brush all the cut sides of bread with half of oil mixture.
Cooking
Grill bread, cut sides down, until lightly toasted, about 1 minute.
Remove from grill.
Quickly spread cut sides of toast with goat cheese.
Top with tomatoes and olives, dividing equally.
Drizzle remaining oil mixture on top.
Return sandwiches to the barbecue.
Cook until bottom sides are toasted, cheese melts, and tomatoes begin to soften, about 3 minutes.
Cut each sandwich in half and serve.
