Ingredients:
  • 1 lb potato, sweet, scrubbed (~3 1/2)
  • 2 tsp olive oil
Instructions:
  1. Cooking
    1. Cook the sweet potatoes whole in a pot of cold salted water until just cooked and still firm, about 25 minutes.
    2. Preheat the barbecue.
    3. Allow to cool slightly, then slice into 1/4" thick rounds.
    4. Brush the rounds with olive oil.
    5. Grill the sweet potatoes on both sides until slightly charred, about 5 minutes total.
