Ingredients:
  • 1 cup rice, white long grain / basmati, basmati rice
  • 2 cups water
  • 1/4 cup almonds, slivered, roasted
  • 1 tbsp butter, unsalted
  • 1 onion, yellow, diced (~2/3 cup)
  • 2 tsp ginger, fresh, peeled, grated
  • 1 cup carrot, grated
  • 1/4 tsp salt, kosher
  • 1/4 tsp cayenne powder
Instructions:
  1. Prep
    1. Place the rice in a fine sieve and rinse under cold water until the water runs clear.
  2. Cooking
    1. Bring the water to a boil and add the rinsed rice.
    2. Cover and reduce heat to low and allow to steam for 18 to 20 minutes, until rice is cooked.
    3. Meanwhile, pulse the almonds in a blender until chopped but not powdered and set aside.
    4. Melt butter in a large pan over medium-high heat.
    5. Saute onions until soft, about 2 minutes.
    6. Stir in ginger, carrots, and the salt.
    7. Reduce heat to low, cover and cook 3 minutes.
    8. Stir in cayenne pepper and almonds.
    9. When rice is done, add it to pan and stir gently to combine with other ingredients.
