Ginger and Almond Basmati Rice

Ingredients:
1 cup rice, white long grain / basmati, basmati rice
2 cups water
1/4 cup almonds, slivered, roasted
1 tbsp butter, unsalted
1 onion, yellow, diced (~2/3 cup)
2 tsp ginger, fresh, peeled, grated
1 cup carrot, grated
1/4 tsp salt, kosher
1/4 tsp cayenne powder
Instructions:
Prep
Place the rice in a fine sieve and rinse under cold water until the water runs clear.
Cooking
Bring the water to a boil and add the rinsed rice.
Cover and reduce heat to low and allow to steam for 18 to 20 minutes, until rice is cooked.
Meanwhile, pulse the almonds in a blender until chopped but not powdered and set aside.
Melt butter in a large pan over medium-high heat.
Saute onions until soft, about 2 minutes.
Stir in ginger, carrots, and the salt.
Reduce heat to low, cover and cook 3 minutes.
Stir in cayenne pepper and almonds.
When rice is done, add it to pan and stir gently to combine with other ingredients.
