1 tbsp canola oil
1 1/2 tsp curry powder, hot
1 chilies, green, seeded and chopped
3 cups cauliflower, florets
1/4 cup vegetable broth, canned low sodium
2 cups peas, frozen, thawed
15 oz beans, black canned, without salt, rinsed and drained
Instructions:
Cooking
Heat oil in a pan over medium heat.
Cook curry powder and chilies in oil 2 minutes, stirring occasionally.
Stir in cauliflower and broth.
Cover and cook 3 to 4 minutes or until cauliflower is tender.
Stir in peas and beans.
Cook about 5 minutes, stirring occasionally, until hot.
