Ingredients:
2 cups tomatoes, hot house, stemmed, chopped (~3)
1 1/2 cups onion, yellow, chopped
1 tbsp ginger, fresh, peeled, grated
1 tbsp garam masala
1 1/2 tsp curry powder, hot
3 cups chickpeas / garbanzo bean, canned no salt added, drained and rinsed
1/4 tsp salt, sea
1/4 cup almonds, sliced, toasted
Instructions:
Prep
Place the tomatoes, onion, ginger and spices in a food processor and puree until smooth.
Cooking
Place the tomato mixture in a pan and heat over medium heat, stirring occasionally, for 5 minutes.
Add the chickpeas and reduce the heat to low.
Simmer for 10 minutes, season with salt and serve topped with sliced almonds.
