Ingredients:
  • 2 cups tomatoes, hot house, stemmed, chopped (~3)
  • 1 1/2 cups onion, yellow, chopped
  • 1 tbsp ginger, fresh, peeled, grated
  • 1 tbsp garam masala
  • 1 1/2 tsp curry powder, hot
  • 3 cups chickpeas / garbanzo bean, canned no salt added, drained and rinsed
  • 1/4 tsp salt, sea
  • 1/4 cup almonds, sliced, toasted
Instructions:
  1. Prep
    1. Place the tomatoes, onion, ginger and spices in a food processor and puree until smooth.
  2. Cooking
    1. Place the tomato mixture in a pan and heat over medium heat, stirring occasionally, for 5 minutes.
    2. Add the chickpeas and reduce the heat to low.
    3. Simmer for 10 minutes, season with salt and serve topped with sliced almonds.
