Curried Chickpea Burgers

Ingredients:
1 cup chickpeas / garbanzo bean, canned no salt added, drained and rinsed
8 oz potatoes, russet, peeled, quartered (~1)
2 tbsp canola oil
1/2 onion, yellow, chopped (~1/3 cup)
2 cloves garlic, minced (~2 tsp)
1/2 cup tomatoes, canned diced, no salt added, undrained
1 tsp jalapeno, minced
1/2 cup corn, frozen whole kernels, thawed
1 tbsp curry powder, hot
1 tbsp wine, red dry
1/4 tsp salt, sea
3/4 cup bread crumbs, whole wheat
1/4 tsp pepper, black freshly ground
1/2 tsp vinegar, rice
2 pita bread, whole wheat (4" dia), halved
2 leaf outer lettuce, green leaf, shredded
Instructions:
Prep
Place the chickpeas in a food processor and pulse until pureed.
Cooking
Cook the potatoes in a pot of salted water until soft, about 10 minutes.
Drain and set aside.
Meanwhile, heat half of the oil in a pan over medium heat.
Add the onions and cook until soft and beginning to brown, about 2 minutes.
Increase the heat to medium high and add the garlic, diced tomatoes, jalapeno and corn.
Saute for 2 minutes and then add the curry powder.
Continue cooking until all of the tomato liquid has evaporated, about 2 minutes and then add the wine.
Cook until mixture thickens and remove from the heat.
Add the curry mixture and the cooked potatoes to the chickpeas.
Season with salt and pepper.
Allow to cool, mash the mixture and then form into 4 equal sized patties.
Coat the patties on both sides with the bread crumbs.
Heat the remaining oil in a non stick pan over medium high heat.
Cook the patties until browned on both sides, about 2 minutes per side.
Toss the lettuce with the rice vinegar.
Serve the patties in the pita halves topped with lettuce.
