Ingredients:
  • 2 tsp canola oil
  • 8 oz chicken breast, boneless, skinless, cubed
  • 1 cloves garlic, minced (~1 tsp)
  • 1/2 onion, yellow, chopped (~1/3 cup)
  • 1 tbsp curry powder, sweet
  • 2/3 cup chicken broth, canned, low sodium
  • 3 oz coconut milk, light
  • 1 carrot, peeled, diced (~1/2 cup)
  • 1/4 tsp salt, sea
  • 1/4 tsp pepper, black freshly ground
  • 2 cups snow peas, trimmed
Instructions:
  1. Cooking
    1. Heat the oil in a non stick pan over medium high heat.
    2. Add the chicken pieces and saute for 3 minutes.
    3. Remove the chicken to a plate and cover to keep warm.
    4. Add the garlic, onion, and curry powder to the pan and cook for 2 minutes.
    5. Add the broth, coconut milk, carrot, salt and pepper and simmer, covered for about 5 minutes.
    6. Return the chicken to the pan and simmer, uncovered for 5 more minutes.
    7. Add the snow peas and simmer for 2 minutes.
