Ingredients:
  • 2 chicken breast, boneless, skinless
  • 1/4 tsp salt, sea
  • 1/4 tsp pepper, black freshly ground
  • 2 tbsp mayonnaise, reduced-calorie, cholesterol-free
  • 2 tbsp yogurt, plain, low fat
  • 1 apple, red, peeled and diced (~1 cup)
  • 1 onion, red, diced (~2 3/4 cups)
  • 1 tsp apple juice, unsweetened
  • 1 tbsp parsley, fresh italian / flat leaf, chopped
  • 2 tsp curry powder, hot
  • 2 pita bread, whole wheat (4" dia), cut in half
  • 4 leaf inner lettuce, green leaf
  • 1 tomatoes, hot house, sliced
Instructions:
  1. Prep
    1. Preheat the broiler.
    2. Pound the chicken breasts between pieces of wax paper to 1/2" thickness.
    3. Season with half of the salt and pepper.
  2. Cooking
    1. Place chicken on a broiler and cook until juices run clear when pierced with a fork, about 4 minutes per side.
    2. Cool then cut into 1/2" cubes and place in a medium bowl.
    3. Add mayonnaise, yogurt, apple, red onion, apple juice, parsley, curry powder, salt, and pepper.
    4. Mix.
    5. Heat pita in the oven.
    6. Stuff each pita half with a quarter of the chicken and the lettuce and tomato slices.
