Ingredients:
2 chicken breast, boneless, skinless
1/4 tsp salt, sea
1/4 tsp pepper, black freshly ground
2 tbsp mayonnaise, reduced-calorie, cholesterol-free
2 tbsp yogurt, plain, low fat
1 apple, red, peeled and diced (~1 cup)
1 onion, red, diced (~2 3/4 cups)
1 tsp apple juice, unsweetened
1 tbsp parsley, fresh italian / flat leaf, chopped
2 tsp curry powder, hot
2 pita bread, whole wheat (4" dia), cut in half
4 leaf inner lettuce, green leaf
1 tomatoes, hot house, sliced
Instructions:
Prep
Preheat the broiler.
Pound the chicken breasts between pieces of wax paper to 1/2" thickness.
Season with half of the salt and pepper.
Cooking
Place chicken on a broiler and cook until juices run clear when pierced with a fork, about 4 minutes per side.
Cool then cut into 1/2" cubes and place in a medium bowl.
Add mayonnaise, yogurt, apple, red onion, apple juice, parsley, curry powder, salt, and pepper.
Mix.
Heat pita in the oven.
Stuff each pita half with a quarter of the chicken and the lettuce and tomato slices.
